No-bake Energy Bars!

I was on Facebook yesterday when BAM! my sister sends me this cute little message from college:

“hey pmasta, i was telling mama about a recipe for, no-bake energy bars for you to put on    your blog or something! theyre soooo good!”

so I just couldn’t resist. heres the recipe I hope you enjoy. they are quite delicious!

1 cup oatmeal
1/2 cup peanut butter (natural, unsalted if possible)
1/3 cup honey
1 cup coconut flakes
1/2 ground flaxseed(I used whole flax seeds)
1/2 cup chocolate chips
1 tsp. vanilla

you can also add nuts or dried fruit instead of chocolate chips or just all together!

directions:
combine, chill for 1/2 hr, roll into balls

makes: 18-20
keep in refrigerator for up to a week

Homemade Ice Cream Sandwich


These cookies are delicious and moist and perfect for simple birthday ice cream sandwiches. I filled the cookies with a store bought vanilla ice cream (because I wasn’t allowed to make some). But any ice cream would pair nicely. The cookies are delicious plain or with ice cream. they are soft and moist but still can hold up in sandwich form.

 

 

Ingredients

  • 3 cups flour
  • 1 3/4 teaspoons baking soda
  • 1 1/2 sticks unsalted butter, room temperature
  • 1 1/2 cups brown sugar
  • 1 cup sugar
  • 1 1/2 teaspoons vanilla extract
  • 3 eggs
  • 1 1/2 cups pecan pieces
  •  semi-sweet chocolate chips to taste

How-To

  1. Preheat the oven to 375°F.
  2. In a bowl, combine the flour and baking soda. Set aside.
  3. In a large bowl (or the bowl of your stand mixer), bean the butter and sugars together until mixed.
  4. Add in the vanilla extract and eggs and beat until creamy.
  5. Beat in the dry ingredients.
  6. Fold in the pecans and chocolate chips.
  7. Scoop by the tablespoon onto ungreased non-stick baking sheets, 2 inches apart.
  8. Bake for 8 minutes, or until light brown and slightly browned around the edges.
  9. Allow to cool on the baking sheet for 2 minutes before transferring to a cooling rack.

Servings:about 61 cookies

yes you read correctly. PRETZEL ROLLS! and they are more delicious then they sound. They taste like a super delicious pretzel and you must try this recipe. They are perfect for everything! If you want to try a simple yet delicious roll, try this! they are amazing and super pretzel-y! I honestly couldn’t get and good pictures because they were almost gone by the time I picked up my camera.

Homemade Peeps

I saw these adorable little peeps and new I had to try to make them. Peeps are the iconic easter candy and when I saw I could make my own I knew I had to give it a shot. The marshmallows are so fluffy and delicious. I decorated my very simply with just two pairs of food coloring eyes. If you would like to try something new I would definitely try to make these. They are a little time consuming but definitely worth it!
